Peppered Vegetable Rice

This is a fool proof recipe which can be made in a matter of 10 minutes and tastes really delicious. I tried this from Laavanya's blog. We had it along with delicious Vegetable manchurian. This rice could be made in a jiffy and is so versatile that you could add any vegetables available in your refrigerator. It goes well along with any curry or side dish and can be made with leftover rice as well.

Ingredients
Cooked Basmati Rice - 2 cups
Vegetables - 1 cup (carrots, beans, bell peppers/capsicum, corn)
Onion - 1 medium sized
Ginger garlic paste - 1 teaspoon
Oil - 1 spoon
Salt and lots of pepper

Directions
Wash and cook the rice along with salt. For 1 cup of rice use 1 3/4 cups of water. The grains should be separate. You could also use leftover rice.

Wash and chop the vegetables into equal sized pieces.

In a bowl take all the vegetables along with 2 tablespoons of water and microwave for 2 minutes. The vegetables should be half cooked by now.

In a saucepan, heat the oil and add chopped onions and ginger garlic paste and saute till the onions turn translucent.

Add the microwaved vegetables and cover and cook for a minute until they get completely cooked.

Add lots of pepper and the required quantity of salt.

Finally add the rice and coat everything with the vegetable mixture. Cook on medium heat for a minute until the rice gets heated up and crisp.

Serve warm with some Vegetable Manchurian!
