Ingredients
Cooked long grain rice - 3 cups
Mixed vegetables chopped (carrots, corn, peas, beans, cabbage)
Spring onions - 2 chopped
Eggs - 2
Soy sauce - 3 teaspoons
Vegetable oil - 2 spoons
Ginger-Garlic Paste - 1 tablespoon
Salt and pepper to taste
Directions
Cook the rice with enough water. If using refridgerated rice, bring it to room temperature. In a wok or pan, add half the oil and add the eggs. Scramble the eggs and season with salt and pepper. Remove the scrambled eggs from the pan and set aside.
Add the remaining oil to the wok and when hot, add the ginger garlic paste and fry till the raw smell disappears. Add the soy sauce, salt and pepper. Finally, add the chopped mixed vegetables and stir. Cook on high heat till they cooked partially and still remain crispy.
Add the cooked rice and mix all the ingredients together. Toss together until the rice gets heated and turns crisp. Fnally add the scrambled eggs and toss together.
Serve warm with a suitable side-dish or just with ketchup!

Egg Fried rice looks very delicious and temtping very colorful and nice Div... I dont see egg much so kids will never deny taking them...

ReplyDeleteYummyyyyy..:)so filling Divya..This is what I made with my left over rice of Tomato rice.But I add evrything along with egg,i mean saute g-g paste then egg,then veggies(grated),then sauce n rice..Lil more fast way for lazy bums like me..tastes good as well..:)

ReplyDeleteFried Rice is one of the most frequent recipes I make as part of my dishes for packing my hubby's lunch. he likes it with anything. The one am drooling over right now on ur blog is the Chocolate Nut cookies...yum yum...and liked ur breakfast smoothie too...I also love to have it but never added oats and orange...will make urs next time..will be back here for more

ReplyDeleteLooks great. I recommend adding the rice before the soy sauce and giving it a nice sear for a minute or two. I usually skip the vegetables and use lots of shallots and garlic, like this.

The Easy Peas Pulao looks great (and easy for a clumsy goof like me). On the other hand, so does the Egg Bhurji, the Savory Bombay French Toast--yumm! and the Pesarattu. I'll be coming back again.
