Ingredients (Serves 2)
Basmati Rice - 1 cup
Frozen or fresh green peas - 3/4 cup
Onion - 1 thinly chopped
Ginger - 1 inch
Garlic - 3 cloves chopped
Green chillies - 5 slit vertically
Cloves - 4
Cinnamon - 1 stick
Cardamom seeds - 2
Cumin seeds - 1/2 teaspoon
Cashews - 6
Ghee / oil - 1 tablespoon
Coriander leaves to garnish
Directions
Wash and soak the basmati rice for half and hour.
Chop the onions and mince the ginger, garlic and green chillies in a blender.
In a pressure cooker, add the ghee or oil, add the cumin seeds, cloves, cardamom, cinnamon and fry for a minutes. Once the spices release their flavors, add the chopped onion and fry until translucent. Add the minced ginger, garlic, green chillies and fry for a minute.
Add salt and green peas and saute for a while. Add the soaked rice and fry till al the flavors get blended with the rice. Add water ( rice: water::1:1.5) Cover and cook until the water gets absorbed.Fluff slightly with a fork.
Garnish with coriander leaves and fried cashews.
Serve with raita or any gravy, I served wuth a mixed vegetable kurma.
