I happened to have this anaheim scramble in Corner Bakery a while ago and it made a great breakfast along with some roasted potatoes, toast and orange juice. It was quite pricey and I tried recreating it at home. We totally loved it. The authentic recipe calls for some bacon and avocado, but I skipped them. It is simple to make and makes a wholesome breakfast! We had it with some hashbrowns and orange juice!
Ingredients
Eggs - 2
Cheddar cheese - 2 tablespoons or more
Tomato - 1
Onion - 2 tablespoons chopped
Oil - 1 tablespoon
Salt and pepper to taste
Fried bacon and avocado - optional
Directions
In a skillet, heat the oil. Once it turns hot, add the onions and saute until they turn translucent. Then add in the eggs and scramble it. Stir in the cheese immediately and scramble till it melts. Do not overcook the eggs. Stir in finely chopped tomatoes and once it gets heated up, add in the salt and freshly ground pepper. At this stage you can add in the avocados if using.
Serve hot with toast and hashbrowns with a side of coffee or OJ!
