Ingredients (Serves 2)
Eggs - 2
Onion - 1
Tomato - 1
Turmeric - 1/2 teaspoon
Red Chilli Powder - 1/4 Teaspoon
Coriander Powder - 1 teaspoon
Fresh Coriander leaves- Chopped 2 Tablespoons
Oil - 1 Tablespoon
Salt and pepper to taste
Butter - 1 tablespoon
Directions
Chop the onions and tomatoes finely. Heat a non-stick pan on medium heat and add the oil. Add the chopped onion followed by chopped tomatoes and saute until it turns translucent. Add in the red chilli powder, turmeric powder and mix well.
Break the Eggs and pour into the pan directly. Stir briskly. Add the coriander leaves butter and mix well. Remove from heat and serve warm.
It makes a good stuffing for bread/burger.. filling breakfast!
