Easy Peas Pulao

This is an easy, breezy pulao recipe which can be prepared in a matter of minutes because it doesnt involve much chopping. It is a mildly flavored with Indian spices and is versatile because it can be served along with any kind of sidedish from exotic chicken or paneer curry to simple raita. It is perfect for parties.

Ingredients (Serves 2)

Basmati Rice - 1 cup
Frozen or fresh green peas - 3/4 cup
Onion - 1 thinly chopped
Ginger - 1 inch
Garlic - 3 cloves chopped
Green chillies - 5 slit vertically
Cloves - 4
Cinnamon - 1 stick
Cardamom seeds - 2
Cumin seeds - 1/2 teaspoon
Cashews - 6
Ghee / oil - 1 tablespoon
Coriander leaves to garnish

Directions

Wash and soak the basmati rice for half and hour.
Chop the onions and mince the ginger, garlic and green chillies in a blender.

In a pressure cooker, add the ghee or oil, add the cumin seeds, cloves, cardamom, cinnamon and fry for a minutes. Once the spices release their flavors, add the chopped onion and fry until translucent. Add the minced ginger, garlic, green chillies and fry for a minute.

Add salt and green peas and saute for a while. Add the soaked rice and fry till al the flavors get blended with the rice. Add water ( rice: water::1:1.5) Cover and cook until the water gets absorbed.Fluff slightly with a fork.

Garnish with coriander leaves and fried cashews.

Serve with raita or any gravy, I served wuth a mixed vegetable kurma.
