Fried Rice

Fried rice can be prepared in several ways..You can add any vegetable/ingredient according to your liking and availability..I love the various colurs of the veggies in the rice..This can be prepared if you have leftover rice..It is very simple to prepare..It took less than 20 minutes for me to prepare this..

Here comes the recipe..

Basmati Rice - 2 cups
Bell peppers - I used half of red and yellow colour
Carrot - 1 cut into thin strips
Beans - 1/2 cup
Green peas - 1/4 cup
Corn - 1/4 cup
Cabbage - 1/4 cup finely grated
Onions - 1 small finely sliced
Ginger garlic paste - 1 tbspn
Green chillies - 2 to 3 depending on your taste
Soya sauce - 1 tbspn
Chilli sauce/tomato sauce - 1 tbspn
Cashews and raisins
Oil - 3 spoons
Salt and pepper to taste

Cook the basmati rice with 4 cups water..
Meanwhile, in a saucepan add the oil and fry the onions..Once they turn soft and translucent add the ginger garlic paste and green chillies and saute for a minute..Then add all the vegetables, salt and pepper..Sprinkle very little water and allow the veggies to cook for two minutes..They should be half cooked..Now add the soya sauce and chilli sauce..

Now add the cooked rice to this vegetable mixture and stir this mixture for a minute or two in low flame..Roast some cashews and raisins in ghee and also add them..
If you dont like the sweet taste you can omit the raisins..
Your fried rice is ready..
It tastes good when served with gobi Manchurian..Or just tomato sauce and raita will do..
